Aron's Formula 3 Chili
6 slices bacon
3 medium onion, chopped
1 bell pepper ( use a jalapeno pepper if you want it spicier.
2 jalapeno peppers finely chopped
6 cloves garlic, finely chopped
3 pounds ground chuck
3 pounds of stewing beef, chopped small, about ¾ inch cubs
3 cans (8 oz.) tomato sauce
2 tbsp. chili powder
2 tbsp. ground cumin
1 tbsp. paprika
3 beef bouillon cubes
2 cups water or one bottle of beer
salt and pepper to taste
2 corn tortillas or two tablespoons of masa for thickening
Chop bacon and fry in large Dutch oven.
Sauté onion, peppers and garlic in
bacon drippings with bacon. Add
beef and brown. add chili
powder, cumin,
paprika and bullion cubes stir and simmer for five minutes to temper
spices. Add tomato sauce
and water or beer. Cover
and cook on low in a
Crock-pot for 6-8 hrs. (or
HIGH 3 to 4 hrs.) or until onion is tender.
About an hour before serving put in chopped tortillas to thicken.
Tortillas
should break down and thicken chili.
We call this Formula 3 Chili because it is based on a
formula with a base of three. For each pound of meat you put a teaspoon
of chili powder, ground cumin , a half of teaspoon of paprika, half an
onion, one bell or jalapeno pepper and a small can of tomato sauce.
Using this formula you can change things up with just about any
type of meat or combinations of meats you want.
I you are a Yankee, a
Canadian, a New Mexicans, an Englishmen, or any other
non-southerners you probably think I left out the beans in the above
recipe. I didn't leave them out at all because this is Chili.
If you put beans in it would be something other than Chili.
If you would like, you can make a pot of beans to eat along side the
chili but if you put them in the chili you have just messed up a great
chili and a pretty good pot of beans.
